Asparagus and Mushrooms in Lemon Thyme Butter

Asparagus and mushrooms lightly sautéed in butter and flavored with lemon zest and fresh thyme. A delicious and healthy side dish that pairs well with just about any meal!

Serves: 6


  • 1 pound fresh asparagus, trimmed and cut into 2" pieces
  • 8 ounces fresh mushrooms, cleaned and sliced
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme, minced
  • 1 teaspoon grated lemon zest
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon pepper


  1. Heat butter and oil in a large skillet over medium heat. Add asparagus and mushrooms and cook 4-5 minutes, stirring occasionally, until crisp-tender. Stir in thyme, lemon zest, lemon juice, salt, and pepper and serve immediately.
