SWEET BACON TWISTS



 
3 Tbsp. brown sugar...
1/2 tsp. black pepper
1/4 tsp. cayenne pepper
1 can crescent rolls ( leave out if on low carb )
bacon

Preheat oven 375ยบ F. Coat baking sheet with cooking spray.
Fry bacon to half cook it. You want it to be bendable and not crisp. Remember, it will finish cooking in the oven.
Mix together dry ingredients in a small bowl.
Unroll crescent and cut each double section into three even pieces, length ways.
Place a piece of bacon in each cut dough and twist. Pinch ends as needed to hold them together.
Roll each twist into the sugar mixture. Be sure to coat well all around it. Press it as needed to make it stick to the dough.
Bake 12-14 minutes or until golden.
Store in refrigerator in air-tight container when cooled.
Makes: 16 twists

Sweet and Spicy Chicken Bites

 


Ingredients

- 3 lbs chicken tenderloin or boneless skinless breasts
- 2 lbs bacon
- 2 cups brown sugar
- 3 TBS chili powder
- 1 tsp cayenne pepper

Directions

1. I prefer the tenderloins. Take the chicken and cut it into ping pong ball sized cubes. Mix the dry ingredients and put into a bowl to dredge the chicken. Cut the bacon slices into 1/3’s. Roll the chicken piece in the dry mixture. Wrap with the bacon. Secure by stitching the bacon into the chicken with a toothpick. Roll again in the sugar mixture. Grill for about 25 minutes until the bacon is cooked and crisp. If you don’t have access to grill, bake at 350 for 30 - 35 minutes until bacon is crisp. I find that it is too smoky in the house because the sugars tend to smoke. Also, cover with foil while cooking indoors so as not to dirty your oven!

2. Serve with Ranch dressing or Blue Cheese for dipping sauces.

Crescent Sausage Bites



Ingredients:
1 lb. sausage (pork or turkey)
1 (8 oz.) package cream cheese
2 packages crescent rolls
Dash salt & ground black pepper


Directions:
In a saute pan, brown sausage; drain. Add a dash of salt and pepper. Blend in cream cheese until the cream cheese is melted.
Unroll one package of crescent rolls and place on a baking sheet. With your fingers, gently press the seams together to seal them. Spread the sausage mixture evenly over the crescent roll dough, leaving about a 1/2-inch border along the edges.
Unroll the remaining package of crescent rolls and place on top of the sausage mixture. Press the edges together to seal. Gently press the seams together.
Bake at 375 degrees for about 20 minutes, or until crescent roll dough is golden brown.
Cut into small squares and serve. (A pizza cutter makes really quick and easy work of the cutting.).

Sweet & Spicy Peanuts Recipe

 


TOTAL TIME: Prep: 10 min. Cook: 1-1/2 hours + cooling

MAKES: 12 servings

Ingredients

  • 3 cups salted peanuts
  • 1/2 cup sugar
  • 1/3 cup packed brown sugar
  • 2 tablespoons hot water
  • 2 tablespoons butter, melted
  • 1 tablespoon Sriracha Asian hot chili sauce or hot pepper sauce
  • 1 teaspoon chili powder

Nutritional Facts

1/3 cup equals 284 calories, 20 g fat (4 g saturated fat), 5 mg cholesterol, 214 mg sodium, 22 g carbohydrate, 3 g fiber, 10 g protein.

Directions


  1. Place peanuts in a greased 1-1/2-qt. slow cooker. In a small bowl, combine the sugars, water, butter, hot sauce and chili powder. Pour over peanuts. Cover and cook on high for 1-1/2 hours, stirring once.
  2. Spread on waxed paper to cool. Store in an airtight container. Yield: 4 cups.

Buffalo Chicken Dip

 
 
3 (8 ounce) package cream cheese, softened
1/2 cup bleu cheese dressing
1/2 cup ranch dressing
3/4 cup hot sauce - Franks is best
2 cups sharp cheddar cheese
2 - 3 Large cans of chunk white chicken breast
 
Toss everything but the cheddar cheese in the crock pot and cook til hot (stir several times while cooking) Top with the Cheddar Cheese, stir in the melted cheddar prior to serving.
This is great with tortilla chips but for those watching their carbs, this is great with celery sticks as well

Cranberry Salsa Dip with Cream Cheese



Yields: 1 1/2 cups
Prep time: 20 min


Ingredients:

1 (12-ounce bag) or 3 cups fresh cranberries, rinsed and drained
1/4 cup minced green onions
2 small (approximately 2 tablespoons) jalapeno chile peppers, cored, seeded, and minced
1/2 cup granulated sugar
1/4 cup fresh cilantro leaves, minced
2 tablespoons finely-grated fresh ginger
2 tablespoons fresh-squeezed lemon juice
2 (8-ounce) packages cream cheese
Cranberries and/or cilantro sprigs for garnish


Preparation:

Rinse, drain, and pick over cranberries, (discarding all that are soft or bruised).

Place the cranberries in a food processor; pulse until finely chopped but not mushy.

Place chopped cranberries in a bowl; mix together with onions, jalapeno peppers, sugar, cilantro leaves, ginger, and lemon juice.

Cover with plastic wrap and refrigerate at least 4 hours so flavors develop (salsa will be too sharp and tart to begin with).

On a serving plate, place cream cheese; cover with the dip. Garnish, if desired, and served with crackers.

Makes 1 1/2 cups.

Bacon Jalapeno Cheese Bombs




 

These four ingredient Bacon Jalapeno Cheese Bombs are super easy to make and are the perfect comfort food for game day fun or a get together with friends!

Serves: 16 cheese bombs

 

Ingredients

  • 1 (16 ounce) tube biscuit dough (8 large biscuits)
  • 6 ounces part skim, low moisture mozzarella (can substitute cheese sticks)
  • 16 ounces cooked bacon ends and pieces
  • 3 large jalapenos, seeds and stem removed, minced

Instructions

  1. Preheat oven to 400 degrees F. Cook up bacon ends and pieces and set aside cooked crumbled bits.
  2. Split each of the 8 biscuits in half to make 16 flat disks. Divide cheese into 16 equal portions.
  3. One biscuit at a time, add chunk of cheese and about ½ a teaspoon of bacon and jalapeno on dough and then wrap ends around to create a ball. Be sure to fully seal.
  4. Once all the balls have formed, dip each ball in any remaining bacon and jalapeno. Place on a baking sheet with the extra bacon and jalapeno pieces facing up.
  5. Bake in preheated oven until golden brown, about 10-15. Serve immediately so the cheese is nice and melty.
